Cooking with kids: Easy banana cake

We don’t bake together often enough but now we’ve managed to get hold of essential ingredients, like flour, eggs and sugar, it has been an absolute joy. We’ve made this banana cake a couple of times while we’ve been in lockdown and it’s delicious! What’s more, it’s super easy and quick to make as well as being a great way to teach kids how to measure ingredients. If you have some bananas on the turn and you’re not sure what to do with them, get baking!

Ingredients

  • 140g soft unsalted butter
  • 140g caster sugar
  • 140g self-raising flour
  • 2 large eggs, beaten
  • 2 ripe bananas (mashed)

Depending on the tin (or dish) you’re using, this recipe makes roughly 10 slices of banana cake – don’t expect it to be around longer than a day though. It is mouthwateringly tasty! We’ve made the banana cake using 150g of butter, 150g of sugar and 150g of self-raising flour with 3 bananas – it’s just as good. The only prep is to ensure the butter is soft (if not, we’ve given ours a quick blast in the microwave), beat the eggs and mash the bananas.

Method

Heat the oven to 180 degrees/160 degrees for fan ovens or gas mark 4.

Beat the butter and caster sugar together until it is light and fluffy. This can easily be done by hand without any electrical equipment.

Slowly add the beaten eggs with a couple of spoonfuls of the flour. Gradually add the rest of the flour followed by the baking powder.

Stir the mashed bananas into your mixture.

Pour the mixture into a tin/ovenproof dish and cook for 30 minutes. Leave to cool for ten minutes or so before getting stuck in!
